远在意大利北部的山峦之间,食物始终和季节保持着美好的关系。自然的生机,四溢在每一道料理中,带领食客们品鉴到食材组合的无限可能与传统意式烹饪魅力。
In the mountains of northern Italy, food and the seasons are intricately intertwined. Vitality flows from every dish on Chef Andrea’s chef’s table menu, showing diners the infinite possibilities of Italian cooking.
7月15日, Chef Andrea以“山”为灵感的Chef Table菜单将家乡的山间风味奉献给各位食客,开启了限时限量的风味之旅。质朴的家乡菜品在主厨的重新创作之下展现出尊贵而迷人的光芒,晚宴好评如潮,令人称赞。
On 15 July, Chef Andrea Susto presented a limited-edition “mountain” menu inspired by the lofty terrain of his home region. The traditional dishes showed off another side of Italian cuisine that was well-received by all the diners.
美食家胡元骏赞叹道:“一餐吃下来,有惊喜,有创意,在味道的把控上有巧思,有分解,灵动、细腻而又不失豪放和绚丽。”
Famous foodie Hu Yuanjun said: “The menu showcased Chef Andrea’s ingenuity in terms of the control of flavours, as well as the plating and presentation, demonstrated both delicacy and boldness.”
山林之中,有着各种季节限定的丰饶物产。雨季过后,漫山遍野遍野的菌子,俯拾皆是。将牛肝菌,鸡枞菌,羊肚菌与家庭日常料理意式土豆面团完美结合,来自大自然的芬芳带来灵动的韵律。
In the mountains and forests, there are dozens of different seasonal ingredients. After the rainy season, mushrooms like porcini and morels are everywhere, perfect to serve with potato gnocchi.
夏日阿尔卑斯山脉下清澈见底的湖泊,是当地人寻味鳟鱼的好地方。经过烤制的鳟鱼肉质鲜嫩配上辣根、苹果乳、oscietra鱼子酱,别有一番层次风味。
In summer, the crystal clear lakes at the foot of the alps are filled with trout. For this menu, Andrea serves grilled trout with horseradish, apple cream, and oscietra caviar.
新鲜的黑松露无疑是山野中最珍贵的馈赠,有了这独特香气的渲染,和牛牛颊肉的脂香更加浑厚丰润。美食家食尚小米赞叹道:“新鲜黑松露刨片散发出魅力气息,牛脸颊肉慢炖后软烂细滑,李子汁红润光泽更有酸鲜水果芬芳。”
Fresh black truffles are undoubtedly one of the most precious mountain ingredients. Their unique aroma pairs well with the fatty richness of wagyu beef cheeks.Famous foodie Shishang Xiaomi said: “The fresh black truffle shavings fell like enchanted snow, the beef cheek was perfectly tender, and the plum sauce had the perfect shine with a sour-fresh fruit fragrance.”
传统的意式苹果派,大多数出自意大利北部。因为这里是苹果的盛产区,苹果派几乎是家家厨房中都会做的甜品,酥软的蛋糕上有着焦糖包裹的苹果,甜蜜俏皮,和香草冰淇淋增添着餐桌上的雀跃轻盈。
For dessert, Andrea has created an apple pie inspired by the abundant apples that grow in the region, served with cool vanilla ice cream.
为了能让更多朋友品味到Chef Table的魅力,分享这份带有温度的意大利风情,Opera BOMBANA将于7月29日再现山峦之美,为大家带来充满情感的意大利美食风情画卷。
