作为全球最具影响力和权威性的餐厅星级评定榜单之一,众人翘首以盼的2022上海米其林指南发布会圆满收官。如期而至的星级榜单,总计有47家餐厅摘星。

The 2022 edition of the Shanghai Michelin Guide was launched at a glittering awards ceremony in November, with a total of 47 restaurants receiving stars.

今年的发布会晚宴同样精彩,众位星级名厨以“怪诞”为主题,联合呈现出了一场非凡盛筵。屋里厢朱海峰先生为晚宴创作菜品——“香糟脆皮和牛”,赢获好评连连。

This year’s gala dinner after the announcement of the guide was equally exciting, bringing together Michelin-starred chefs from across China. Wulixiang’s Chef Zhu Haifeng presented a dish of “fragrant crispy wagyu beef,” which proved popular at the dinner.

随园食单中早有记载,入口之物,皆可糟之。朱师傅将海派料理中独具特色的“糟卤”技法第一次烹饪于和牛,这是上海本地人最熟悉的味道。选用品质极高的澳洲M8和牛,经过18个小时腌制锁住汁水再过油烹炸,尽显和牛本质的高级感,用青豆泥、脆片做辅助,特别的调卤带来糟味鲜美,前中后调与和牛肉极具冲突感,又分外和谐。

To make the dish, he applied a Shanghai-style brining technique (known locally as “zaolu”) to wagyu beef for the first time. He selected premium M8 wagyu beef from Australia, marinating it for 18 hours before deep-frying until crispy on the outside and melting tender and juicy on the inside. Served with a green pea purée and crispy crackers, the dish had an outstanding balance of flavours.

除此之外,在摆盘上亦独具妙思,以西式多元酱汁颜色搭配呈现。红色的树莓酱、黄色的芒果酱、咖啡色的意大利黑醋,作为盘饰,跳跃的颜色抢眼吸睛,作为酱汁搭配,丰富的层次带来惊喜口感。

The dish was also uniquely presented, blending in elements of Western plating style with multiple eye-catching coloured sauces.

中西合璧,突破边界、多元碰撞的烹饪技法,彰显主厨的创意和功底,打造出了传统与创意兼具的惊艳料理。多元化、包容性,以达到中西元素的传承与融合,是朱师傅一直不断尝试的内容,也是他对餐饮行业未来的憧憬。

This skilful, boundary breaking combination of Chinese and Western styles demonstrates Chef Zhu’s creativity. He has long been committed to bringing together ingredients and techniques from different culinary canons to create new, boundary-pushing dishes.
